Tindora Tamarind Tomato Curry

Tindora is a vegetable which is a good source Nutrients.
A semi dry curry that goes well with roti or plain rice.

PROCEDURE

Total Time 25 minutes
Ingredients:
- Tindora 500gms
- Tomato 2 pieces
- Tamarind lemon size
- Coriander seeds 1tbsp
- Red chillies 5
- Jaggery 1tbsp
- Mustard seeds 1tsp
- Channa dal 1tsp
- Salt to taste
- Turmeric powder 1tsp
- Hing 1tsp
- Oil 2tbsp
- Curry leaves a few
Procedure:
- Wash and slit the Tindora lengthwise.
- Pressure cook for one whistle.
- Meanwhile heat a pan, add little oil add coriander seeds, red chillies, tamarind.
- Stir fry for a few minutes, then add the tomatoes.
- Roast seeds for few minutes and switch off the flame.
- When it is cooled down, grind everything into a fine paste along with Jaggery.
- In a pan, add oil when it is hot add Mustard seeds.
- When it splutters up, add channa dal, hing and curry leaves.
- Add the paste, turmeric powder and salt.
- Saute for a few minutes till it becomes thick.
- Add the cooked Tindora, mix well and saute it for few minutes.
- Sabzi is Ready.
