Baigan Bharta is a very tasty North Indian recipe for eggplants or aubergine. It is made by slowly roasting aubergines, peeling and mashing them and then cooking them with onions, tomatoes and aromatic Indian spices. It has a thick consistency and goes well with rotis and other Indian flat breads.
Ashoka Baigan Bharta is medium spicy.
Immerse the inner unopened pouch in boiling water for about 5 minutes. Open and serve hot. Or microwave the contents in a bowl it for 1-2 minutes before serving.
