This is an Indian curry prepared with an assortment of vegetables like peas, carrots and potatoes. The vegetables are cooked with onions and aromatic Ayurvedic spices like cumin, coriander powder, fenugreek and turmeric. These spices thoroughly coat the vegetables and impart their rich, lingering flavour and fragrance to them.

Preparation
