Uttappam is made from the same rice-lentil mix that is used to prepare Dosas and Idlis. The difference is in the preparation. Uttappams are made thicker, like pancakes, pan-fried with an onion-coconut topping and garnished with fresh curry leaves and green chillies. Some recipes also use tomatoes, grated carrots and other vegetables, to make it a complete and healthy vegetarian meal.
This South Indian specialty is a light and tasty snack, breakfast or main course option. Also prepare MTR Rice Idli and MTR Multigrain Dosa along with it to give the main course variety.
1. Mix 1 measure of mix, ½ measure of sour curd and 1 measure of water. Set aside for 10 minutes.
2. Pour one cup of batter on a heated pan. Add a spoonful of ghee/oil, garnish with chopped onions, tomatoes, green chillies and coriander leaves.
3. Fry both sides on low flame.
4. Serve with coconut or peanut chutney and sambar.
