Khaman Dhokla is a soft, spongy snack from the state of Gujarat. It is a steamed preparation made from fermented chick pea batter topped with a tangy and sour lemon-chilli tadka.

1. Mix 2 tbsp oil into 235ml water. Gradually pour it into the Khaman Dhokla mix. Blend it with minimum stirring to form a smooth batter.
2. Pour the batter into a tray greased with oil. Steam for 15 minutes. Allow it to cool for 10 minutes and cut into 5cm cubes.
3. Heat 2 tbsp oil. Add 1 tsp mustard seeds, a pinch of heeng (asafoetida) and 1 tsp sesame seeds. Pour the tadka evenly over the Khaman Dhokla pancake. Sprinkle chopped coriander and coconut and serve with green chutney.
