Indian Cuisines is not just about health and taste. It is what memories are made up of. The summer holidays spent with grand parents and maternal uncles and aunts, the large gathering of cousins, the aroma of grandma’s cooking, the craving for another helping of our favourite dessert and finally the long afternoon siestas after a sumptuous lunch. Literally food for the soul. And not just soup.

Indian cuisine is a smorgasboard of experiences. No two regions have the same cuisine. The variety is of cuisines in India is unbelievable. What is more unbelievable is how cities have become a melting pot of food and culture and tradition. Ganesh festival though primarily Maharashtrian is celebrated all over India. Even muslims in Mumbai participate in this festival in great numbers. Durgotsav is another famous festival that is celeberated all over India although predominantly in West Bengal. The same dish is known as gol gappa in delhi, paani puri in Mumbai and puchka in Calcutta.

Indian cuisine has always been known for its spice and ancient authenticity. Ayurveda plays a very major role in how the concept of an ideal meal was developed. This tradition has then seen many a mélange of foreign influences due to the various rulers of India.

But what has remained constant is the belief that an Indian meal is a balanced meal of not only carbohydrates, vegetables, proteins and fat but also of salt, sugar, sour and pungent. This is what makes a typical Indian meal- A perfect food triangle.
