Payaaz Wali Bhindi
A delicious preparation of bhindi/ okra sauteed with caramelized onions. Pyaz Wali Bhindi is a popular dry vegetable in Punjabi Cuisine usually served with Kadhi Pakora along with Parathas for the lunch menu.
This dish can be served with Roti as well for simple weeknight dinner.

Directions (How to make Pyaz Wali Bhindi?)

Firstly, wash and clean okras under the tap water.

Drain all the water and pat it dry.

Cut it in round shape or thin slices.

Into a saucepan/wok add-in mustard oil on medium heat, now add cumin seeds
and chopped onions. Stir until crisp and golden brown.

Add in chopped okras with a spoonful of tamarind juice and mix well.

Cover the lid for about 1 minute.

Add in all the dry spices ( turmeric, tamarind powder, coriander powder, red chili,
curry leaves) mix well.

Add in salt and little water, cover the lid for 5 -10 minutes.

Stir in between, until cooked completely.
