Paani Poori is an Indian street food snack that nobody can resist. Mainly originating from Varanasi, it is known by different names in different parts of the country. Paani poori in Maharashtra, Golgappe in Uttar Pradesh and Punjab while Puchka in West Bengal and Gupchup in parts of Odisha. No points for guessing that Paani Puri is indeed the most loved street food in India. A golgappa is a small, round shaped crispy puris, filled with various spices and chatpata water. So we promise you'll never miss those street stalls again once you make this paani puri recipe at home. Fresh, flavoursome and right in the comfort of your homes!

INGREDIENTS
PROCEDURE

Ingredients:

For making puris

  • Semolina/ Sooji /Rava (fine) - 1/2 cup

  • Wheat flour - 1/4 Cup
  • Baking powder - 1 tsp

  • Salt

For Making Mint Paani/ Spicy Mint water

  • Mint - handful
  • Coriander leaves - handful
  • Green chilli - 2 to 3
  • Ginger - 1 inc
  • Tamarind water - 1 cup( juice extracted)
  • Chilli powder - 1/2 tbsp
  • Pani puri masala - 2 tbsp
  • Black salt 0 1 tsp
  • Roasted cumin powder - 1tsp
  • Pepper powder ( black / white) - 1tsp



For making Potato Masala

  • Boiled potatoes

  • Chopped onion

  • Chopped curry and coriander leaves

  • Grated carrots( peas if available)

  • Chat masala - 1 tbsp

  • Chilli powder ( little) and salt to taste(skip if you have added with potato)




Directions (PURIS)

  • Mix Sooji, wheat flour , baking powder and salt together

  • Add little lukewarm water and make a dough

  • Set aside for 30 mins.

  • After 30 mins roll into thin rotis and cut into small round shaped puris.

  • Fry into piping hot oil.

Mint pani/ Mint water

  • Gring mint/coriander/green chilli and ginger into smooth puree

  • Mix all the dry ingredients and 2 cups water to get thin flowing panis

  • Adjust the spice according to your taste.

Potato masala

  • Mash potatoes , chopped onion, coriander and curry leaves.

  • Add turmeric , chilli and chat masala.

  • Add grated carrots and peas( optional)

For eating the Paani Poori:

Break a hole in the centre of the thinner side of the poori, and fill with a little potato and  fill with the paani and eat the whole poori immediately.
