About Basmati Rice
Grown mostly in northern India and parts of Pakistan, for centuries Basmati rice has been the pride of India. The word ‘Basmati’ means ‘full of aroma’ or ‘fragrant’ in Hindi. True to its name, it is this delightful aroma that distinguishes Basmati rice from other rice. It is also said to be sweeter in taste, has long grains which become even longer after cooking. Each long grain remains separate and fine. It is the preferred choice not only in the Indian subcontinent but also outside. 

Uses
While Basmati rice has found a place in various cultures across the world, it remains an Indian delicacy. Few of the most famous dishes made preferably with Basmati rice are:
- Biryani (cooked with various vegetables and/or meat).
- Pulao ­(cooked with various vegetables).
- Sweet rice pudding or Kheer (with fruits, milk and ghee).
- Plain rice (served with lentils soup called dal or sambhar).

- It is rich in nutrients and natural fibre.
- Rice protein is considered one of the highest quality proteins as it contains 8 essential amino acids.

RECIPE
Chicken and Green Peas Rice
- 1 glass rice (boiled)
- 1 chicken fillet (cut in cubes or vertical thin slices)
- Half cup peas 
- 6 - 7 tbsp oil          
- Salt 
- Green chillies              
- 4 tbsp Ginger paste                     
- 2 tbsp Garlic paste
- 1 medium size Onion or 5tbsp of brown onions                    
- 7 tbsp Tomatoes paste
- 5 tbsp Yogurt                      
- 4 tbsp Soya Sauce               
- 1tsp White Cumin  
            
Method
1. Heat oil. Add garlic and ginger (2tbsp) paste till it gets soft.
2. Add chicken pieces and cook on high heat for 10 minutes or till the pieces become golden brown. If you are using fresh onions, then add the onion at this step. Ignore the brown onions in the next step.
3. Add brown onions, salt, green chillies, tomato paste, soya sauce and yogurt. Cook it over medium heat till all ingredients are mixed well.
4. Add peas and stir for another 5 minutes. If you see firm gravy with separated oil, then proceed with next step. You can continue with next step even if peas are half done.
5. Add the remaining ginger (2tbsp) and let it simmer on minimum heat for 10 minutes. Remove from heat when you see 6-7 tbsp of gravy is left in the pot.
6. Add the boiled rice on top of prepared chicken. Mix gently. Sprinkle cumin on top and cover with lid.
7. Return the rice to the stove and let it simmer on low heat for 10 minutes.
8. When done, garnish with green chillies and serve hot.
